So I’m back home enjoying myself to the fullest, spending time with my family and meeting up with my closest friends, which I absolutely adore.

Since the biggest reason for the updated blog design was to be able to write and post some recipes I love, I now start with my absolute favourite Thai salad. I found a similar recipe somewhere on the internet ages ago and since then I have made it my own by adding ingredients I love.

You will need:

±10 cherry tomatoes
1/2 red pepper
1/2 medium carrot
1/2 big cucumber
A pack of crayfish tails
Handful of mint
Handful of coriander
1 lime
Vermicelli rice noodles
Fish sauce
Extra virgin olive oil
Brown sugar

How to:

1. Boil water in a saucepan and remove from the heat. Add the vermicelli noodles and leave to soak for around 2-3 minutes. Rinse it under called water and leave on a side to drain.
2. Cut the cherry tomatoes into half and remove the insides into a bowl for your dressing. Cut the carrot and the pepper(remove the skin) into thin slices. Peel the cucumber, cut into half and deseed, cut into medium thin slices.
3. Prepare the dressing: squeeze the juice out of half a lime into the bowl with tomatoe insides. Add a little olive oil and carefully add some fish sauce(you can always add more depending on your taste!). Add some brown sugar to remove the bitterness. Mix it all together.
4. Put the noodles, vegetables and crayfish into a big bowl. Add the coriander and mint and pour the dressing on top.

Voilà!


I realised some people like the dressing better without the tomatoe insides, so you may as well remove that. I will add grapefruit in the summer too, will make it even lighter.

P. S. Don’t throw away the stems from the mint - makes a great tea :)

I realised that I have completely forgotten about my beloved blog and since the heating and water in my house don’t work (AGAIN!) and my motivation towards my strategy exam is not at the highest possible point, I decided to quickly update my blog.

Now I really liked the previous layout but since I sometimes feel like I want to write things, I decided to change it a little. Let’s see what it brings, but I can promise much of my everyday life, recipes, good music and some other arty stuff.

I will try to update a little more once I’m done with exams and chilling back home in Lithuania.
